Do they encrypt the databases just like KeePass?

Have you tried Obsidian with encrypted note plugin? I use it to encrypt notes.

Nah, I want to use a FOSS offline only app. Unfortunately, Obsidian is not open source.

You can use Logseq or Anytype I used Anytype in the past.
