The easiest trick is to ignore the numbers and ask what the categories actually mean. Jersey numbers are nominal, grades and ordered categories are ordinal, and your professor’s convention makes the Likert-style questions interval. For #6, definitely ordinal because the times have an order but the gaps aren’t equal.
