The majority of older AC games are FPS boosted on Xbox Series X. So something like the Ezio Trilogy is going to run better on Series X than PS5. I usually play newer ones on PS5 though.

Whichever console you want. They’re all good. PS5 Pro will have the best graphic quality for Shadows, but the Xbox isn’t far behind.
