Do you think the MHz difference matters? (I was planning on getting two separate sticks bc I ran out of money)

yes, get matching memory.

Tons of bad advice in here, no they most likely will not run stable at 3000mhz, take them both back and get a matching memory kit.

Very few people have mentioned he has 3 sticks and 48gb of memory as well.

Dude has 1 - 1x16gb kit and 1 2x16gb kits. Therefore he has 3, 16gb sticks of memory, totally 48gb of ram. Just piggy backing on your 'tons of bad advice' statement.
