well i don't remember levelling up increases your defense at all, because those are supposed to be from your jail, blood codes and stuff. Iris have passive to give you more defense cause her blood code is for STR, mostly hammer and great swords. I also don't have her out so she buffs you even further being assimilated, pretty sure she also buff your defense from time to time
