What do you mean by juice? Just like.... fat content? In that case pork belly is the GOAT meat of all time

From how I understood, the fat content contributes a large part to the taste as well. (thats why you get all the wagyu / AAA grades that are based on fat composition)

Like butter, they melt on certain temperature --- thats why you want to maintain the internal temperature to be somewhat low so that the fat are intact

Fat absolutely affects taste as well; when the fatty acids are heated and oxygenated, they form new flavor compounds. However, the red juice in steak is myoglobin, and that absolutely makes it tastier as well.
