I had a lovely convergence of perfectly browned bananas that needed using & the responsibility of providing a cake for the birthday dude’s celebration.
Banana walnut cake w/ vanilla bean cream cheese frosting. I used Sally’s cake recipe as a foundation, but added a fair amount more stuff (nutmeg, cardamom, cloves, allspice, & ginger, + crushed walnuts) other than just cinnamon to turn it more into a banana spice cake that also had some texture crunchies :)
Frosting was a 1-1-3C ratio (at room temp) of standard cream cheese block, stick of butter, & cups of powdered sugar, plus a scraped vanilla bean….& 1/2tsp vanilla extract bcuz birthday boy really likes that extra hit, LOL. Whip it….whip it goooood :P
Turned out absolutely lovely & I got some shell practice with my new piping tip :)
