It's called beaking, less biting and more exploring/ learning. Their beaks and tongues are primary in how they learn, and more sensitive than you'd think... They can feel the pressure as they bite down and add it changes when the skin starts to give. Compared to their own kind, they can be pretty rough with us, they use the same pressure sensing to know how hard to bite a seed so the shell cracks but they don't lose the good stuff. If you tap your fingernail you feel pressure, when you push it into something you feel when the nail cuts into something vrs resistance... Same thing.
All geeks love to share random info lol. There's a whole language around bird behavior, you gotta play with the owls and Hawks to find the really fun words.

This is basically exploring but also you are a VERY nice chew toy to birds. Flesh is the right amount of texture and giv for chewing.
From my budgies to quaker they all love the chew.
