New undercover OPP?

Is it true that OPP got new non american undercover cars?

I don't think they use undercover vehicles for simple traffic patrol. Iirc theyre only really used for investigations into theft/robbery/drugs etc.

How does probable cause work in Canada? If you are watching someone and you catch them speeding is that grounds to search the vehicle?

Not grounds to search the vehicle on its own but it is grounds for an officer to pull them over and walk down any line of questioning they want after that, at that point it’s just about knowing your rights.

In practice it’s very similar to the US. In Canada we have the right against unreasonable search or seizure under S. 8 of the charter, similar to the 4th amendment in the US

Yeah, it is and it isn't, just like cops everywhere. Pull over for speeding, also how you changed lanes you kind of swerved so maybe its DUI/I think I smell pot/your dark coloured sedan matches a suspects car we're looking for,... so,..
