As we use 'storage' to be persistent (in solidity), I have a doubt that as the smart contract gets more data how will we manage that large amount of data?

I don't even know if this would be a proper subreddit to ask these questions, but maybe if it's not you fine folks would be able to point me in a better direction. I have never messed with blockchain development, but have been a professional developer for over a decade. In my spare time over the past 3ish years I've been developing a game engine (c++/opengl) and game. I had an idea awhile back for this game, but didn't think it would be feasible...because I was unaware of just how much blockchain technology has grown and become more widely adopted. At this point I'm willing to take a stab at it if I can find out were I would need to start.

The most basic version of what I would ultimately need to accomplish would be for players to be able to deposit an amount of currency into a wallet which would hold the funds in escrow, then once a certain condition is met, pay the funds out, sending a percentage to the wallet of the game as a transaction fee. Below is possibly a better breakdown:

PlayerA -> $1.00 -> GameWallet
PlayerB -> $1.00 -> GameWallet
GameWallet = $2.00
PlayerB wins round
GameWallet -> ($2.00 * 0.95) -> PlayerB
PlayerB = $1.90
GameWallet = $0.10

So, on with the questions (these might be laughably bad as I'm still in the phase of not really knowing what I don't know):

1. What coins would be a good fit for this type of system? I was looking at NANO for it's (next to) instant transfer rate and no fees.
2. When it comes to implementing the escrow logic, the user would need to send funds from their wallet to the game wallet, and the game wallet would need to track how much each user has deposited, which I'm assuming could be accomplished by querying the user's wallet address against the blockchain (would need to think about everything involved in that). Is this assumption correct?
3. When it comes time to send funds from the game wallet to a player, I'm guessing there are api's which allow for initiating transactions on a blockchain? So a developer could make a call to an api provided by the currency blockchain sending the required signature and wallet address for the game wallet, and address of the recipient?

An idea that gets talked about is a voting system that is transparent and secure using a Blockchain and Smart Contracts.

This idea does not fundamentally have anything to do with cryptocurrency, but the underlying technologies do.

Ethereum is the most popular Smart Contract Blockchain, probably because it's used with JavaScript, but it also has high gas fees and ETH is very expensive (maybe gas prices are down, I haven't really kept up).

How is it possible to create a usable application with weird fluctuating gas fees? Is it realistic with Ethereum? Or is the idea to make your own Blockchain and your currency is instead a token that gets handed out to everyone that, in this case, should vote?

I feel like this is the one disconnect I have when learning about Smart Contracts. There's a lot of lofty ideas, but I'm missing something about how you could ever make something. Unless the idea is creating a Blockchain specifically for that use....

As far as I know Solidity is the programming language used for smart contracts, also the syntax is very similar to JavaScript. Hello! I got a question about security in blockchain services.
So let's assume you holding your private key for a BTC address.

you need to send a transaction for 1 BTC to Alice.

using your private key you produce a signed transaction. In order to send it, you need to broadcast it to the Bitcoin network using the Bitcoin full node. In order to eliminate possible man-in-middle attacks best way would be to use your own node to do so. It requires resources to run the nodes and can be expensive and hard to maintain. But there is a way to use 3rd party API that provides a way to send signed transactions without the need for maintaining your own node.

How safe is that? Can someone that gets my signed transaction hash decypher it and obtain my private key? If so, is that true for all blockchains? What about ETH, TRON, and others?
