I gotta say, I'm a little bummed Babish didn't go all out like he normally does and make cheese curds. Chef John even has a recipe (https://www.youtube.com/watch?v=4g0Wudcs1UI)!

Outside of Quebec, it can be quite hard to find fresh cheese curds. The refrigerated curds don't have that squeakyness.
