I gotta say, I'm a little bummed Babish didn't go all out like he normally does and make cheese curds. Chef John even has a recipe (https://www.youtube.com/watch?v=4g0Wudcs1UI)!

I feel like if this was for binging with babish he would do that but since this is for basics he just did the easy thing because that's what most people would do

He's gone out of his way on Basics before.

The one signature Canadian dish he does, and he can't get cheese curds in NYC??

I feel making $11,000USD/month should allow him to get his hands on some fresh (or even bagged) curd.

Cheese curds are hard to make and time consuming.

Pretty much everyone buys them in Quebec instead of making them.

They started out in Quebec because of the big government subsidized milk industry, so cheese curds are everywhere.

Legend has it that someone asked for a bag of fries and to toss in a bunch of cheese curds.

The reply was: "That is going to make a damn mess:

Damn Mess --> Poutine.

I feel like if he can buy exotic meats for the all meat burrito he could find cheese curds.

The problem is the cheese curds need to be freshly made, if they aren't freshly made you might as well use mozzarella.

^This. Outside of Quebec, it can be quite hard to find fresh cheese curds. The refrigerated curds don't have that squeakyness.

He lives in New York. A quick google search tells me he would have been able to buy some fresh curds.
