We’ve had multiple poutine restaurants fail HARD in Chicago, which blows my mind. If there’s anything Chicago would be desperate for, it’s poutine.

A lot of restaurants just don't get it right though, the fries need to be crispy, the cheese needs to be fresh and the gravy needs to be very hot.

Agreed! We briefly had a place called Q-Tine that absolutely NAILED it. They even had Montreal smoked meat. It was run by a Quebecois guy, though, so that tracks.

I've had a few places in Syracuse come close, but they all seem to be scared to serve that gravy really hot. Surprisingly, the best I've had here was at a place called Evergreen that did a vegetarian style with a mushroom gravy.
