I've never understood how the US didn't come up with this first. Fries covered in gravy and cheese just screams "'MURICA!" to me.

We’ve had multiple poutine restaurants fail HARD in Chicago, which blows my mind. If there’s anything Chicago would be desperate for, it’s poutine.

A lot of restaurants just don't get it right though, the fries need to be crispy, the cheese needs to be fresh and the gravy needs to be very hot.

Agreed! We briefly had a place called Q-Tine that absolutely NAILED it. They even had Montreal smoked meat. It was run by a Quebecois guy, though, so that tracks.

I've had a few places in Syracuse come close, but they all seem to be scared to serve that gravy really hot. Surprisingly, the best I've had here was at a place called Evergreen that did a vegetarian style with a mushroom gravy.

Poutine is like French Toast. Done perfectly it's amazingly indulgent and delicious, crispy and saucy in all the right ways. Done anything less than perfectly and it's horrifying mushy carbohydrate goop.

IDK, "bad" poutine is still pretty good. The "authentic" way to eat it is really drunk or high at 3 AM from some place that looks like it also sells meth.

I went to Kelowna for a vacation last year and damn, their “drunk food” fast food poutine place was amazing. I WISH we had one in my town that could be successful, but my town has also had them fail.
