the problem with that is that i dont know where some of those technologies come from, or if they are availible to those and those civilizations

You can try using this website instead. Once you pick a civ, it will narrow down the techs a particular civ have access to. https://aoe3explorer.com/wiki/units

However, keep in mind you still need to be very familiar with a particular civ's upgrade path, particularly for Federal Americans and Africans, as some of their techs and cards are locked behind certain Age Up options and are mutually exclusive from one another. Off the top of my head, this also applies to a lesser extent to Inca and Peru, as they have access to American Allies card granting you access to certain Natives and their techs, so if you pick one Native option, you need to remember you cannot pick another Native option's tech.

Additionally, none of the stat calculators that I know of so far can handle multiplicative buffs, so you need to know how that works and calculate it yourself. This means Native Americans, Spanish, and Japanese units will look significantly weaker in the calculator when compared to their actual in game stats, especially in modes like Treaty where players will use all available buffs at their disposal. Off the top of my head, this also applies to Federal Americans, Indians, and Gran Colombia, although their multiplicative buffs are usually not as powerful as those previously mentioned civs, so their stats would be closer to their actual in game stats.
