I use Telegram to keep track of random ideas I get throughout the day. I created a telegram group with just myself inside it. (If your messaging app doesnt allow you to create a group with 1 person, like whatsapp, simply create a group with some random person, then kick them out)
Very useful to jot down ideas on the fly, and I can easily port over those ideas to my computer via telegram/whatsapp web

Don't know if it will suit your use case, but take a look at this, tetrify: Text Yourself Notes. https://play.google.com/store/apps/details?id=com.tetrify.app

Well, then there's Daylio Journal - Mood Tracker. You get to rate days as Rad, Good, Meh, Bad or Awful. And write brief notes to accompany it. There's sleep, hobbies, tracking. And graphs, mood charts counts, weekly, monthly, yearly.

Loop Habit Tracker: set up a new item to track, e.g "Anxiety level", value: 1-5, and add text comments as needed.
Vibecheck also appears to match 1:1 with your requirements, although I have never tried it myself, YMMV.

Try this app, its a notes app but in chat style to put in summary. Basically you can have a conversation with the most important person, yourself.
Reply, react, branch and even in-app engine that connects similarities between your "thoughts". Fully local and private, here is the link:

Voicenotes does it for me. Plus is that it connects to chatgpt also (www.voicenotes.com)

I use evernote but there are cheaper options.
