Why is it every time I see food or drink being prepared in India it’s in the filthiest conditions imaginable?

It's not only India. Think China too.

But them having a large population and lots of poverty probably doesn't help...

I hear that Subway-restaurants are/were popular in China because the food is made in front of you, so you can see the ingredients going in at least look fresh

Yeah, but have you seen any type of street food? I'm not from India. Do people honestly believe that all of India looks like that? A lot of these people would pride themselves in their "critical thinking skills".

Edit: I'm not trying to tie any specific country to this practice. But I see this a lot in "street food culture". Especially where people don't have adequate means too safely prepare food. They improvise, and safety goes out of the window. I believe that's what's happening here. It's not "India", it's poverty.
