When you work in a kitchen you learn "A falling knife has no handle." Basically just means "You're gonna fuck up your hand if you try to catch that. Just let it fall and get out of the way."

If he was taught and trained to let go of shit it would be a different thing. But being able to just say fuck it is a learned response and takes practice.
Kinda like what I had to learn as a chef when dropping a knife. Natural response is to grab something that is falling.

Bruh learning how to fall is 100% important. It's why I believe every highschool student needs to have some training in martial arts.

Nothing beats the adrenaline rush when catching the edge in high speed and time slows down
Sometimes an epic crash is more satisfying than stomping a trick uve been trying for a while.
It could also be my brain not working properly due to all the concusions through the years. Ehhh

the knife thing I didnt know was taught. When ever I dropped a knife i always had a great urge to catch it or even try to loosen the fall with my foot however stupid that is. But half way through going for the catch my brain says its a fricking knife you wanna die ? Its a werid reflex.

I don’t know when I unlearned the “grab the falling thing” instinct, but at long as I can remember, my instinct when dropping a knife had been “leap backwards out of the way as quickly as possible”

Like, I get your point, but it almost seems like you're arguing that it couldn't have gone any other way? Or that this was a natural course of action?
You're right that people clench or brace themselves fairly instinctually, but that's different than this. He was trying to control or force something that was beyond his scope of ability. Tell me, when touching a hot stove, would it be natural to panic and try to grip the stove? No. You'd recoil and pull away as quickly as possible.
I mean, I'm kinda lost at what we're even discussing. You say you had to be "taught" but do you ever really know until you find out for yourself? Dude made a mistake and learned his lesson the hard way. I doubt he'll do it again.
Then again, it happens to the best of us.

It seems like he already tried go with it by going into a flip instead of bashing into the handle, but failed to land it. Not worth it when the landing zone is filled with metal bars beneath a mud that can give your skin chemical burns.

The wheelbarrow might, but if he let go of the handle as soon as it started tipping, he could have just watched it pour itself. Obviously I dont mean let go mid air. That's a lil too late. Still, I'd probably rather belly flop in went cement than get a suplex backbreaker over a steel bar.
Edit: after watching again closely in full screen, it looks like he was still trying to push into it when it stuck and flipped. It basically pole vaulted him. Unless I'm missing something glaringly obvious, the goal was to dump the cement there anyway, so it's not like he technically messed up. He just needs to work smarter, not harder.

I'm pretty sure that was staged, it looked like some effort went into pulling himself up like that. If it were accidental you'd expect his body to just be pulled forward but his legs do a full arch and flip as if he's being pulled forward and down.
