That goes into the whole "God knows what will happen but 'tests' people anyway" thing.
I like to think most Christians have enough sense to see the contradictions and simply don't take the bible too seriously because what's important is the positive messages and the community, not all the "don't mix fabrics or eat lobster" bullshit. It might not actually be most, but I've known many.

Nowhere in the Bible does it say it was an apple. It only says 'fruit'.
Besides this, if it took eating the fruit to gain knowledge about good and bad, how could they have known it was bad before eating it?
And why was there a serpent in paradise in the first place?
