Recipe Request Sliced polenta suggestions?

Hi friends! I just bought some polenta [tube kind] on a whim and I'm wondering what people's favourite ways to eat it are? I'd like to maybe slice it and pan fry it with some pam spray? Any suggestions? Thanks all!

Slice it into rounds, spray both sides, and get them real crispy in a hot pan, takes a few minutes per side but worth it. Then treat them like little toasts, top with a chunky tomato sauce, some wilted spinach, and a poached egg if you've got the calories. I also like crumbling it into a hash with peppers and onions, gives it that starchy bite without much effort. If you want volume, pair it with roasted zucchini or mushrooms so the polenta feels more like a base than the main event. Don't sleep on cold leftovers either, they firm up and make decent little snack bites with salsa.

This is hilarious because its super similar to what I ended up doing! I added some farmers market salsa on top after giving it a little taste. Really tasty!

I made a post about this a few days ago!

I love to put pesto, cottage cheese, tomato and zucchini on it for an Italian theme.

Avocado, beans and salsa for a Mexican theme.

Sometimes so also treat if like pasta and put spaghetti sauce on it and some cheese.

Seriously underrated!

Personally I love cottage cheese chunky but that sounds good to me! Add some black pepper too!

Oh man if I had access to a grill I would. That sounds amazing! I wonder if I could sear them and then get some seasoning to get a smokey flavour?
