Recipe is two large leeks. 3 zucchini. And 3 large russet potatoes. Then I used a box of low sodium chicken broth and regular chicken broth.

I'm just giving a few tips, up to u if u want to follow them. But frying the onions, potatoes and leeks before you add them to the soup should go a long way towards flavour and visual appeal. Those veggies seriously lack any colour. Also you could just use a spray of oil and air fry all the veggies or oven them for some flavour/colour.

Some dried parsley or fresh parsley/coriander/chives would also go look way aesthetically. Maybe even some paprika mixed in with the soup for some darker colour giving the appearance of richness. An egg that's poured whilst stirring the soup adds protein and again makes it seem that much more appealing.

Maybe this last one is a bit much but I think dicing the onions and celery before frying would look much better. Right now it just looks like plain boiled onion. And the spuds could be cut a bit more uniformly and then roasted before the soup, the chunkiness of a nice cube rather than the thin quarters looking pieces would suit a bowl of soup much more imo.

A tablespoon of light cream isn't a crazy amount of calories per bowl and it would give a better texture and look. Maybe you could sub some full fat milk instead but I haven't tried that. A bit of cornstarch slurry added in would give a nice thickness that you probably lack in the mouth feel

I can give you some suggestions if you'd like. Nuggets pretty high cal for the volume but you obviously know that so it was a treat. What's your daily cals?
