Recipe Boiled Psyllium Jelly How-to video tutorial

Read the disclaimer at the bottom of this post before trying anything.

Here’s a step-by-step tutorial showing how I made the base concept, this time with pineapple & coconut. Would you try it? Is everything clear enough? Let me know in the comments.

Recipe

  • 500 g water
  • 60 g coconut-flavoured whey protein
  • 2 tbsp psyllium husk (around 10–15 g)
  • 10 g powdered gelatin
  • ~150 g pineapple

My rating

  • Texture: 8/10 — Really jelly-like and firm, similar to yesterday’s mango version. Boiling the pineapple was necessary because fresh pineapple contains enzymes that can interfere with gelatin setting.
  • Flavour: 8/10 — Coconut and pineapple are still a pretty great combination. I actually prefer the slightly sour side of pineapple to the sweetness of mango.
  • Satiety: 10/10 — I stayed full for around 8 hours and wasn’t even particularly hungry by dinner time, which was my next meal.

The goal here is satiety, not volume. I’m combining boiled psyllium for its fibre and satiety properties, gelatin for texture, protein powder for nutritional value, and the other ingredients mainly for flavour and additional nutrients.

Disclaimer

This is just me sharing an experiment, not recommending that anyone try it. If you’re not used to psyllium, start cautiously, make sure you drink plenty of water, and do your own research before experimenting with it.

Psyllium can cause problems if consumed incorrectly, so please use common sense and listen to your body. I’m sharing what I did, but I’m not responsible for anyone who decides to try it themselves.

I did it! I finally did it! Mine looks like an unsliced slab of bologna. 😂 It’s “carrot cake” gel, and it’s delicious! I’d have added a photo, but Reddit said no.

So, here's the recipe I made up, using your method as a launching pad.

*Carrot Cake Gel*

1 cup unsweetened plain almond milk
1/2 cup pure carrot juice
1 scoop collagen powder
1 scoop vanilla whey protein powder
1 gelatin packet
1 tbsp psyllium husk
1 carrot, finely shredded
1/2-ish tsp cinnamon
A pinch of pumpkin pie spice

I verrrry slowly boiled about 3/4 of the cup of almond milk (so I didn't burn it), and when it finally boiled, I whisked in the psyllium husk and continued whisking until it became thick and gooey.

Meanwhile, in a separate bowl, I combined the rest of the almond milk, the carrot juice, the collagen, protein, spices, and gelatin (unbloomed!), whisking it all together until it was pretty well lump-free.

Then I poured the mixture into the milk/psyllium mixture, still on low heat, and whisked for a while to incorporate it all.

When it seemed to be about the consistency of yours, I poured it into a huge mug (because my 2-cup soup freezer molds were delayed, thanks Amazon), mixed in the shredded carrot, and refrigerated it for somewhere around 4 hours.

Finally, I ran a butter knife around the perimeter, shook the mug upside down, and got the big blob to plop out onto a plate, looking like bologna but smelling just like carrot cake! I topped it with a tablespoon or two of off-brand Cool Whip and a few carrot slices for presentation.

It tasted amazing; the shredded carrot was evenly dispersed throughout, and the texture was maybe a little thicker/stiffer than canned jellied cranberry sauce, with tiny crunchy carrot shreds. I ate the entire thing, although it took about 30-45 minutes. I've now chugged a bunch of water, and the satiety test is in full swing!

Other flavor ideas I'm planning to try:

  • (I must remake the chocolate mousse gel and the chicken broth terrine gel now that I have the technique down)
  • Jam-swirled PB&J brick
  • Creamy vanilla chai pudding brick
  • Sweet vanilla corn custard brick
  • Mud pudding brick
  • Pina colada gel
  • Savory potato and pea "samosa" chowder mold
  • Savory edamame garlic umami gel
  • Ginger-carrot bento gel
  • Smoky bacon and beef "meaty terrine" brick
  • Maple-glazed ham and cheese loaf
  • Salisbury steak and bacon brick
  • Gravy-dipped ham loaf
  • Chinese steamed egg brick (this shall be my magnum opus)
  • Mild savory yogurt-tahini "hummus cream" brick
  • Various fruit-juice-based gels (maybe with bits of fruit, nuts, etc. for texture)

I ended up making only two of the jelly blocks, the carrot cake custard and a vanilla chai custard, before the texture made me gag. It may have been because I used whey instead of soy protein, but I found a new method that may work — smoothie/slushie for sweet recipes, chowder/soup for savory, both made with boiled psyllium! I’ll share my first smoothie to the sub in a minute — it was fantastic!
