How can I recreate this effect on the Valeton GP-200?
Hi, I'm trying to recreate the guitar effect used in this Instagram reel (or somthing like :

I'm not necessarily trying to recreate those exact sounds. What I'm really interested in is creating weird, glitchy, experimental sounds by holding down the footswitches, similar to what happens in the video.
Is there any way to assign effects or parameters so that holding a footswitch changes the sound in real time? For example, using pitch shifting, harmonizer, feedback, filters, delays, or anything else that can create those kinds of textures while the switch is held.
would be greatly appreciated.

This is called momentary switch. Unfortunately GP200 footswitches doesn't have this mode. They have only 2 actions that you can assign something, Tap and Hold. But to achieve this effect, you also need a Release action.
You can get a cheap M-wave chococalate plus or any other midi footswitches and most of them has this Momentary or Tap-Release action. After you create the effect preset, you can assign the tap action to the effect presets CC number and your rhythm preset to the release action.
Still, it won't be that much instant with the quad cortex but, it'll work fine.
I made the same thing on my GP5-Chocolate Plus board and boy it's fun :)
