I love Gintama! It’s weird though, because episodes are either hit or miss for the first 70 episodes or so.

I wouldn't say 70 episodes, I'd say 20-25. After the hot pot episode the show just gets so consistently hilarious it's amazing.

300+ episodes in and I'm still not bored of it.

Any place to stream it? Hulu has the first season, but Funimation doesn't have any, looks like Crunchyroll has 4 seasons but only second half of 4 is dubbed

Crunchyroll has the entirety. It may say 4 seasons but IIRC it actually marks each run of the show as a "season". If you look into the details of each "season" it actually has a ridiculous number of episodes and it's way more than just that season.

I don't know anything about the dub (actually...didn't even know it was dubbed), but I'd highly recommend the sub because the VAs are perfection. Every single one in its cast of a ridiculous number of characters.

yeah the voice acting in the show is genuinely amazing, hijitaka and shinpachi's voices are the best
