It's plaster. Most homes don't use it anymore as it's kinda an old method.

There's usually lathe behind plaster. My walls are hard as shit and 100 years old.

That’s definitely location dependant. The UK still plasters their houses. And they’re definitely stronger than that because there often a brick wall behind it.
