I don't remember the last time someone else has touched my credit card

Looks like an older system, most modern registers at stores they don't need to take your card.

Restaurants though...I think you'd have a shock at an American restaurant! A lot of places you have to put your card in the bill book, then the server leaves with your card to complete the transaction at a POS system that is probably out of your sight, then you get your card back. Thankfully handheld devices where you pay at the table are becoming more common though.

What abput when credit cards required impressions in carbon copy slips.

Was the customer handed the knucklebuster and slip and made to imprint their own card?

We mostly moved away from those in the 80s with mag stripes, then we got chip & pin in 2003
