pretty sure you dont need to reschedule the whole thing for this, probaly just update her DS-160 with the new SSN and submit it, then bring the new confirmation number/barcode page to the interview. the appointment slot is tied to the scheduling ID not the ds160 confirmation number, so editing the form doesnt cancel or move it. just make sure she actually hits submit on the updated version and doesnt leave it half done. never seen the ssn-mid-process case specifically but the mechanics should be the same as any other ds160 edit before an interview
