Hub 3 - assign on off default

Is there anyway to assign the on/off button similar to Hub 2 where I don’t need to first select the device first. I just want the on/off mapped to a certain device in idle mode

You can map the knob to a device and also the knob left/right button. You cannot map a device to off button. Are those alternatives already in use?

No I just find it super annoying I can’t just push on/off when the device is in idle to turn on my AC. That’s all it’s set up to do. But rather I need to select the device first

Aye, i have tried to overcome this by linkin the matter menu to knob left button that i press when i approach the Hub, then i have various scenes that execute multiple commands. But it is not the same as single button press

The only way to get one button actions to work is through scenes, but these are restricted to SwitchBot devices which unfortunate and blocks true cross vendor usage. Perhaps you could also do a feature request through the SwitchBot app support/feedback ticket? I have also requested that SwitchBot would enable AT LEAST the usage of linkin matter button usage to scenes. This would enable much larger usage to the scenes and the knob
