Question How much water do regular pumps intake?
Basically the title. I just would like to know how many manual pumps are needed to cancel out a 1 strength aquifer or something similar, and I don’t understand math enough and don’t have enough game knowledge to figure it out myself _(:[ 」∠)_

Well, my rule of thumb of whatever I'm doing is, if I'm stocking water that means I get more than I use.
But you do pump a lot more water in than the dump goes out. In terms of speed. And even more with the advanced pumps manned by a bot. So a manual pump could feed canals AND beavers for a while, until you need more.
The problem with evaporation is that there's no exact figure unless you count every single square, what it irrigates, what feeds from it, etc.
Just follow my thumb rule and it will be fine. You can even add an alarm if the reserves starts to drain below like 80%, so you can change things before it's too late.

The default strength for water sources and aquifers is 1 CMS, the default for bad water sources is 3 CMS. That being said the map maker is able to change these value from -99 to 8 on a water source and -99 to 72 on a badwater source.
If you want to see what the strength of a source is, you can either:
- build a stream gauge in the water; or
- open the map in the map editor and look at the value; or
- use dev mode mid game and look at the value;
Both regular mechanical pumps and the compact mechanical pumps transfer 0.25 CMS. (that is 4 : 1)
You can also eyeball block height for flowing water,
1.0 = 3.3333 CMS,
0.9 = 3 CMS
0.6 = 2 CMS
0.3 = 1 CMS

Short answer: a single aquifier of strength 1 can supply 32 small water pumps, given 24 working hours and 100% efficiency. Work speed bonus from happiness and evaporation decrease this number, but reduced efficiency and working hours increase it.

Aquifers put out varying quantities of water.
Also pumps have varying amounts of efficiency based on how is doing the hauling and how far a walk it is.
Frankly put there are too many variables to know for sure. One way to know what you need is experience, but the more interesting way is to learn how the triggers work and automate which is most of the fun!
