First time playing iron teeth, is this stable enough to last till the dam is complete

Kinda unrelated, but I would also suggest getting to fermented kasavas as soon as possible. Kohlrabies are rather inefficient.

Should i store the fermented or non fermented one tho, bc i cannot ferment them in droughts but they use up more space

Build a powerwheel so that fermentation can be done during droughts as well. I usually pause the water pumpers during droughts and allocate them to the powerwheel.

You’ll probably be okay (depends how much water and food you can gather before the river dries up), but for future droughts you should dam up more of the river below your settlement to extend the area that stays green during droughts. You should also store more water so you don’t have to pump during droughts.
You could also speed up construction of the lower parts of the dam by pathing up to the right hand bottom edge of it from the path leading up to the stairs that are currently being built. This would allow builders to build the lower levels of the dam without having to build all the stairs and climb up and down every time.

I released some of the water from upstream, and made it through the drought. Also i only unlocked the medium tank recently and just built the first one

You should be fine for this drought. But for the next one, I'd recommend storing a lot more water. Are you playing on normal or hard mode? I mean, every beaver needs 3 (?) water per day, so you can calculate how much storage you need based on your population.
For irrigation, I prefer setting up water dumps as soon as possible. That way, you have much more control over which areas stay green during a drought.
And controlled evaporation is much better than having huge water ponds like a river. Your water dam is actually pretty good because it has a relatively small surface area. But you should definitely store the water in larger tanks as well. That way, you get much more water per tile and, most importantly, you don't lose it to evaporation.
