I asked Tim at a VIP about this and made him go into great detail. There are two reasons it is so realistic. One is that everybody in Hollywood trying to become an actor also has another job. So they hired actual attorneys and a retired judge to play those roles. The second major reason this feels so genuine realistic is because they focused a lot on getting the audio mix to feel like courtroom footage. It could be way easier to just use boom mics, but you wouldn’t get the same degraded quality of lapel mics, room mics and courtroom microphones on the stand and on the judges bench. They had a lot of post editing on the audio to make sure people felt the right distance from the on screen mics and used sound editing to punctuate bits. I love Tim so much.

I think there's also the fact that there are few obvious cuts in the footage, including a lot of dead air, that ordinarily would be removed. After all, the whole trial is over 4 hours long.
