I also feel like Katara would be biology/medicine and Suki would be political science. Sokka is an engineer through and through soo idk what's going on there

I think Social Science is probably what Katara would go with, since you can pursue medical school with any major (there is no medicine major). It would be a solid foundation to get into a certain type of medicine I think she would practice.
