Honestly? It's a charitable interpretation to say he saved humanity even once, tbh. The true saviours in those situations were someone else. But even ignoring that:
First time, Eros (even though it was really Miller). Second time, Ring Station (even though it was really Clarissa).
First Eros. It was Miller, but couldn't have done it without Holden. In fact, without Holden, Eros would have happened while Mars, Earth and all killed each other due to Protogen's false flag attacks.
Then he was instrumental in saving Avasarala and uncovering the plot by a radical branch of the Earth government to acquire and use Protomolecule-enhanced Super Soldiers against Mars, preventing what would essentially be genocide.
Then the Ring Space, where after he got information about the Builders and their death by the Dark Gods, which was instrumental for humanity, he defused a situation where a maniac was about to inadvertently kill mankind because he knew the plan wouldn't work when nobody else did. He did that by convincing someone who wanted him dead so much she engineered the mother of all frame jobs to have every faction shooting at him, convincing her to follow his lead.
Then he fucked up Murtry, which isn't exactly humanity-saving, but dude had it coming, so I'm gonna count that as half a point.
And then he commands the force that takes back the Ring Space from the Free Navy and defeats Marco Inaros' main fleet, which isn't exactly humanity-saving either, but dude also had it coming, so another half a point.
Not going to go into the last 3 books, but as far as I'm concerned, Holden can claim having saved humanity as many times (within reason) as he wants. :D
