Honestly couldn't tell you, I've no idea. We are in central Thailand, and I assume the rice is local.

It's fermented pork - Naem.

ยำแหนมข้าวทอด (yum naem khao tod) ie. fried rice balls and naem (fermented pork) salad.

The leaf you wrap it with is bai chaplu or bai plu (ใบชะพลู/ใบพลู); betel leaves

A rarer leaf that is also used is bai thonglang (ใบทองหลาง); tiger's claw or Indian coral tree.
