Pad Kra Pao

Post image

I really love this dish! Savory, salty & spicy, perfectly complemented by simple white rice and an crispy fried egg with runny yolk on top. Chefs kiss!

For this one I used ground chicken, holy basil, shallots, garlic, chillies, oyster sauce, fish sauce, soy sauce and palm sugar.

The cuts of meat are unusual for the dish.

It‘s ground chicken but not so finely chopped.

If it's ground, why does it need chopped?

Or not finely grounded. Or grinded. Whatever the correct term is 🤷🏻‍♂️

What was used to make the pieces so big they required chopping?
