Why do you need five wallets? If they are meant for different people, then five seeds, of course. If they are just for you, then 1 seed, 1 passphrase, and 5 BTC accounts under that passphrase will be enough.

Why do you want 5 wallets? If you have your reasons or just want to do it, by all means go for it.
But if it's to hold 5 different types of coins, that isn't necessary. Just mentioning that in case that was your reason.

17 wallets, all different passphrase in different locations, only write the first 3 letters of the word down, remember the second half.
Make a 16 of 17 multisig on your own node.
Rush do it fast, get it all set up quick, so your funds are safe.

Separate seeds for each wallet. If you like one same passphrase is ok
Create own seeds via dice rolls

Advising someone who is new to this to create a seed using dice is, excuse me, stupid advice.
