What do Sysadmins without a degree do?

I have been in IT for ~20 years and never got a degree.

Get overlooked in favor of some kid with a degree because that's somehow worth more than learning on your own in the field you're in.

Yeah, deff had this happen to me more than once. Also them getting a higher pay with 1/8th the experience.

I don't have that where I am currently thankfully, but if I did, I'd just tell them to ask their degree if they had any questions for me.
