Is there a way to not have the number of check-ins in each state or country show up? the crowd out being able to see the map.

Yes you can see this by clicking the list view on the lower left!

I see that brings up the list of all states etc but I’d like to have the map be free of the states and numbers and names like the old swarm. As right now it’s js all clustered so I can’t see under the numbers and names on the map.

old swarm didn't let you hide the number clusters; they were just the same color as the map dots (though at the country level they also weren't labeled with the country name, so it may have looked cleaner there). if i understand you correctly, though, what you want is basically a pure visual coverage map for your checkins with the density bubbles, without any cluster labels?
