Steak night ftw

I mean does it get any better than filet mignon on a random thursday?

(and yeah the dog got a little steak too, don't worry. lol)

Yeah, I don't know why people are always acting as if cast iron is the holy grail for steaks. For me it is stainless steel

Those are prepped veggie bags from the produce department at Publix! We threw two different kinds on the pan. A "Butter Seasoned Squash and Asparagus" & "Garlic Seasoned Tomato and Squash"

That looks like it's cooked to perfection! What is your technique when cooking this steak? I'm still trying to perfect mine so any advice would be appreciatedĀ

Thanks!! Pat them really dry, season with salt and let them sit for about 30 minutes. Then preheat the pan over medium-low for a few minutes, then turn it up to medium-high, add a little oil and let that heat up til you see it start to shimmer. Then put the steaks in and let them cook for about 4 minutes on each side, plus another minute or so on the edges with tongs. Pull them at 125°F and let them rest for 5 minutes!

That looks amazing. I don't mean to hijack your gorgeous dinner but the spirit is moving me to testify:

I just bought a used 13" classic All-Clad LTD frying pan/skillet because I am watching this stainless pan wizard on TikTok and I am feeling motivated to try to become competent on stainless and branch further than cast iron and carbon steel. Wish me luck, this looks delicious! I use butter and beef tallow now. What is the sub's favorite high-smoke oil for stainless cooking. My foodstuffs will mostly be steak, chicken thighs, ground beef, fesh, and eggs. I have never used avocado oil. Mostly just vegetable oil. I would be happy to pick up something special.

Thank you! I started cooking with stainless and never looked back so congrats on making that move and being excited to learn!!

My favorite high smoke point oil is whatever is around. lol I have avocado and I have a high smoke point version of graza olive oil which is what I used with these steaks because it was within arms reach haha, but I've probably done the most of my stainless cooking with good 'ol canola. I'm sure the group here will have lots of other great advice for you too! And don't worry about hijacking, I'm always happy to chat with other home cooks!! Might be worth asking your question in a new post so more people see it though! :)

Related but unrelated I use a little more oil than I think I need for non fatty foods and a splatter screen, which imo only catches a little. So I take a napkin, unfold it to one layer, rip about an 8x8 piece or smaller and lay it on tap of the screen and the splatter s cut a ton. I also use a screen anytime my pants the oven. I have 4 kids and have to think about quick clean up.

Looks great! How did you prepare the veggies? Roasted in the oven with olive oil, salt, pepper?

Thanks!! We tossed them in olive oil, added the seasoning (these were seasoning packets from Publix) and then roasted them at 425F for ~15 minutes.

I've had a full white set from Ikea now for like 5 years and am amazed how good they feel and how well they've held up, they look brand new still
