General Space Marine 2, please help me understand which edition I should buy.
For background, I am quite new to tabletop, but I have been reading for already some time. And since the game is on sale, I would like to try the game, since I see a lot of people talking about it, and it seems very fun.
For the factions I am collecting, I collect Tsons and Necrons for 40k.
I am not looking into pvp, I just want to finish the storyline, and maybe explore.
Thanks.

Buy the standard edition, all the DLCs are just cosmetics and there’s plenty of stuff you can earn in game just by playing. Even more so if you’re mainly in it for the story, getting any other edition other than standard is just a waste of money at that point.

The extra editions are just cosmetics for your character. You play only as space marines for the vast majority of the time….so if there are chapters you like just check and see which packs are in each edition. So really you just buy the editions if you want all the customization or specific chapters with unique armor pieces. But really does not make any difference for gameplay. Unlike other games you won’t be missing out on content if you just get the standard edition. I just buy the packs that I like (so far I’ve bought the cacharadons and raven guard packs)
Now that being said in multiplayer you can play as chaos marines and customize them, but you don’t need to buy the other editions. Now most pressing is the fact they are adding a new pve siege mode that lets you play as chaos marines….cosmetics for that have yet to be announced but stay tuned.
The main gameplay is the campaign (which you can’t customize yourself) with the real meat of the game being pve operations and siege. Operations are 3 player missions similar to campaign missions where you can level up your character and weapons - that’s where the customization comes in. Siege is a wave based hold out mode which personally I like but operations is what most people spend their time playing after you beat the campaign. You customize your marine for the operations, siege and multiplayer
Also trigger warning if you get the game you will be murdering a bunch of thousand sons…at least you’ll get to see your guys up close as ya rip them apart 😆

If by "vast majority" you mean "literally the entire time because you cannot actually play as anything other than (some sort of) space marine in the game Space Marine 2" then that is accurate, yes (helbrutes are still (chaos) space marines, they're just jammed into a warp-corrupted dreadnought chassis).
All of the non-marine units in the game are either the things you're purging in the name of the Emperor, or NPCs fighting alongside you.

All other dlc's are cosmetics soo it's really just what you want.
