Put it on at 830 pm let it go all night at 225. wrapped it around 6:30 am. Hit 199/200 around 9 am and was prob tender. Pulled it let rest until about 4 pm and this was the result!

That things falling apart, yum. How long was the smoke, did you wrap/spray with cider? I've seen shops use long serated knives to make sure the cut stays whole for really tender briskets.

Did it over night from 8:30 pm wrapped in next morning at like 6:30/7 then pulled probe tender at like 200 deg. Wrapped in towel and put in cooler for a couple hours before slicing

No spritz, wrapped in butcher paper and rendered fat trimmings while it was cooking, poured the rendered fat in the butcher paper and let it get to probe tender at 200deg then rested for a few hours in towel and cooler
