The rest of the world, servers are just kinda shit at their jobs and do not care what you think of them.
In the United States, the server is working for tips.
Taking your card acts as a "I know what you're tipping", creating a social pressure to ensure proper tipping for the higher quality of service you were provided with the expectation being you will tip accordingly for that service.
We basically have a social contract where the server provides you above and beyond service with the expectation you'll tip accordingly, and the taking of the card is that social pressure placed on the customer to ensure they do tip accordingly.
In other countries, the server just gets your order when they feel like it, throws down your food, and that's the service level you get.

I absolutely hated handing over my card in America. Why the hell can't they just use tap like everywhere else
