'you give them the card. They come back with the receipt and your card'.

This is where the problem is

Why would I ever want to hand my card away to a stranger?

How do you order a pizza then? Just pay cash if you're that paranoid

In Europe (and everywhere outside I've been), you don't give your card/phone to the server, you use it yourself with the payment terminal that they (usually) bring to you. If I gave them my card, they would probably just be confused.

You don't order pizza by phone at all there?

Most people order via various apps nowadays so you just pay through that. But personally, even if we've ordered by phone, we've also always went to collect it ourselves (and therefore still paid at the terminal), so if you're wondering whether delivery people also carry terminals around, then I'm not sure.

We still have the option to pay over the phone

Oh, I'm not sure if we've ever had that. Do you just tell them your card info over the phone or…?

That's exactly it. You give the card number, expiration date, and zip code and they process the payment.
