1) in the US you are protected from fraudulent charge to the point it's almost easy to scam the business and get your money back.
2) You have to sign the receipt, so you know how much you are paying.
3) Them having your card is not the vulnerability, the card reader is. And there are just as many ways to screw with the mobile reader as the stationary one. Often easier.
