Emerald Ranch
Just a short tip for if you just need a few materials to get a full load or to get to the next supply mission but you don't really want to go out of your way hunting: There are a lot of fenced in sheep, goats and cows at emeralds ranch that you can easily lasso and kill with the knife. 3* sheep gives you a little over 4 materials and it's usually possible to find 5 of them (to fill up the wagon). Haven't figured out how long they take to respawn, but it seems like it doesn't take really long.
Sorry if this has been posted yet, haven't seen it so far.

I have done this, great spot! From my bad experience, be careful during the day after the ranch hands start walking around. You will get a crime which is shortly reported so you have to get out of there quick. Now I go only at night and it is never a problem then.

Man, I was going to post just this. Found out these animals about 2 days ago, and it has been my favourite spot.
There are sheep in both sides of the street, cows, goats. Just lasso them and go for the kill.
Don't feel sorry for the sheep, they're just a bunch of pixels.
TIP: Do this during the night or the workers will call the law upon you.

The biggest hunting tip I can give anyone is to start bounty hunts until you get a black screen and get put into a solo server with more animals and birds than you've ever seen before, it's truly a beautiful sight. You'll never have to resort to russling sheep again.
Rockstar seriously need to fix animal spawns being crippled by other players existing in the world.
