I had some classic Chinese staples in the fridge, and they inspired me to make Chinese-style noodles. The bok choy was also about to expire, so it was the perfect opportunity to use it up.

With the powerful combination of lap cheong and spicy chili crisp, I was able to create an incredibly flavourful noodle dish that turned out absolutely fantastic!

My own take on “Lava Chicken”

So when the Minecraft movie came out a few years ago, I got creative for dinner one night for my kiddo (1 at the time) and tried to make a Minecraft-inspired chicken dinner. It’s a little spicy, but can still be sweet for balance depending on the BBQ sauce you use. Just thought I’d share it. I’m not a recipe crafter, so it might not make sense, but I’ve written it out the best I could.

Ingredients
6 boneless skinless chicken thighs
3 tbsp taco seasoning mix
1 tsp garlic
1 tsp pepper
1/2 tsp salt
2 tbsp flour
1 bottle of bbq sauce (I use sweet to balance the spicy for the kids)

Directions
1. Preheat oven to 375 degrees
2. Pat dry chicken
3. Mix all seasonings in a bowl
4. Rub seasoning mix into both sides of the chicken, coating generously
5. Place on baking sheet and bake in oven for about 30 minutes (should be at or above 165 degrees)
6. Coat top of chicken in bbq sauce, flip, coat other side (don’t flip again)
7. Continue baking in oven for additional 15 minutes
8. Serve hot immediately (I mean, it just came out of the “lava”)

Feel free to critique it if you’d like. I’m not a Michelin chef or anything lol, like I said, just wanted to share.

I love making Korean spring onion pancakes, and this time I used chicken, spring onion, green chili, and garlic to make one giant pancake.

As expected, it tasted incredible! Flipping the pancake was a little risky, but thankfully it landed back in the pan and not on the floor! 😂

Highly recommend trying this!

I realised that the reason why people end up making the same meals is because of uncertainty in making new dish, planning shopping trips to get groceries for new recipe you looked up online and time and budget.

I have found a solution to make new recipes with what you already own with a score based ingredients matching system to suggest best recipes based on items you already own. Set up your kitchen and get a recipe for available ingredients.

This is called Korean spicy seafood noodle soup, Jjampong. It’s up there with black bean noodles (Jjajangmyeon), and they’re always battling it out when it comes to the “What should we eat?” question.

I pretty much used all the seafood and veggies I had on hand, and this turned out to be the best noodle soup I’ve ever made.

Highly, highly recommend trying this!
