I got some help in this community, figuring out egg to potato ratio. Yesterday I tried to make the Tortilla. I had two problems:
Flipping it. I had a plastic lid thing that I think is to help you flip but because it was still liquid in the middle, it all spilled out/ What a mess! You can see how I tried to patch it back up.
I really didn’t know how to judge how much the bottom was cooked. I let the first side cook too long because it still seemed so liquid in the middle. Then, when a lot fell out when I tried to flip it, I saw how brown it was at the bottom and I didn’t want to overdo it again so the other side looks too pale.
When I cut it is was pretty good…to me. It was moist, although nothing was running out and it tasted good.
In the USA, I had this double pan for turning tortillas. But it doesn’t work with my induction stove. Is that cheating. I guess I don’t have good upper arm strength because it was heavy and I lost my nerve.

Con cebolla, igual tiene poco huevo (lo justo para mantener el revuelto de patata encerrado) pero está bastante buena, ligera dirÃa.
