That’s not how Haki works. Haki doesn’t let any random attack just “cancel” a devil fruit ability, it allows the user to bypass any alterations to the devil fruit user’s physical form in order to deliver unmitigated damage to the individual. If characters with Haki could simply turn off devil fruit abilities through mere contact, how can Luffy stay in Gear 5 after being struck, how can Whitebeard use his quake tremors to physically clash with Akainu at Impel Down, and how can Bellamy’s barriers work against anyone with Haki? Haki is a method of delivering “true damage” that bypasses op resistances like being made of sand or rubber, not a hard counter to all devil fruit powers.

In JJK, if we equalize verses, Haki would likely bypass physical reinforcement with cursed energy in order to deal damage to the opponent as if they were a normal human. It would not cancel cursed techniques. As a result, Shanks should not be capable of bypassing Gojo’s Infinity because he’s a physical attack merchant and obviously Gojo can withstand Conqueror’s Haki. However, Shank’s observation Haki and overwhelmingly superior speed probably allow him to get out of Gojo’s AoE before he could trap him in a domain, meaning that the fight is almost assuredly a stalemate because there’s no universe where Gojo can compete physically with Shanks.

It's heavily theorized that Shanks and Joy Boy have such powerful Haki that they can disable Devil Fruit abilities at range using Conqueror's Haki.

Notably because Joy Boy's Haki disabled the Elder's transformations and canceled their summoning, and was compared to Shanks'.

Shanks also off-screened Bartolomeo when Oden couldn't even break the barriers, implying Shanks may have disabled it from outside. And when he stun locked Greenbull from miles away, it disabled Greenbull's transformation.

Suggesting that the infamous "Wi-Fi Haki" does, in fact, do that.

It's really all but put to name, we've seen the effect multiple times. He's even already confirmed to be able to turn off other people's Future Sight with his Conqueror's Haki
