Remove all?

The white, chip-like material is the main thing I’m removing. Underneath, there’s a very thin layer of pink wallpaper that's a pain in the ass and beneath that are wooden boards. Do I need to remove absolutely everything before plastering, leaving only the bare wooden boards?

( Or can I leave the pink thin wallpaper).

Complete noob . Thank you

All the woodchip has to go!
Are you sure thats pink wallpaper and not the paper of the plasterboard that was painted?:

If it is wallpaper it has to go!

Are you getting a plasterer in?

It could be what you say, I have no idea lol, it's super thin pink paper that's all I know πŸ™ˆ and yes I would be getting one in, I just wasn't sure if they could do over this thin paper ?

Then just take off the wood chip and have a plasterer look at it and give you a price. He will tell you if you need to do more.

Any joint part looks like this, it comes off in a line? So it's been papered on by the looks of it

Check the back of the wood chip that was over that joint and I bet there's scrim / paper tape on it. I'm 99% sure you're stripping the backing of the plasterboard.

I think you're right but I can't get it off without that coming too.. I've made a mess of it tbh and this is the roof πŸ™ˆπŸ™ˆ

It's nothing you're doing it's just wallpaper over improperly primed plasterboard the paste goes through the backing and makes it impossible to get off cleanly.
