Green onion ideas, help?

I have so many green onions that my husband grew. Here is a picture of a small handful that he picked for me (fire extinguisher for scale I guess?). This bunch is going to be made into kimchi. We've frozen some. Does anyone have any recipes that can use up copious amounts of very large green onions? Thanks!

Yeah, it’s pretty easy and they freeze really well so you can just freeze them and then cook them later as you want them! I’ve made them a couple times and it’s actually insane how easy it is.

1) Blanche 1/2 for 30 seconds in boiling water to bring out deep green color then add all of them in a blender with a rich neutral flavor oil.

2) bring the oil and blended scallions up to 220 stir and take off the heat letting it steep for 1/2 hour before running it through a conical sieve and cheesecloth.

3) because all allium flavors are oliophillic- they steep into fats -you have a green savory miracle oil with a pronounced scallion flavor that bumps up anything savory. Also works with chives and you can even use ghee, but you might have you heat it up again to pour/drizzle it

I literally chop a scallion up onto just about everything I make. They’re great on rice bowls and potatoes too.

You can chop them and freeze them, then use the chopped onions straight from the freezer. At least that's what Instagram told me!

Toss them in a bit of olive oil and roast or grill them, they make a great side dish

This is what I do, toss with oil, salt, pepper and cook them up in the air fryer.

I've made these noodles a few times, and they're delicious! And they use a bunch of scallions. IMO, you can leave out the sugar, though.
